Torta 1-2-3-4 y un paseo por Inverness / 1-2-3-4-Cake and an escapade to Inverness

(English version below)

Me transporta a casa.

Facil no?

Lately everything around me is new and overwhelming. It is quite difficult for me to have a routine because everyday there is something unexpected in the city of clouds. Every day is a new adventure with plenty of places to go, visiting friends and discovering London... an overdose of movement and trains. To make it clear, I am not complaining, I love it! but sometimes I need to stop and go back to the roots. This is why I was craving for this cake and so I cooked it. It brings me back home.

The 1-2-3-4 Cake, this is the name of this cake, at least for me. I think this is the very first cake I have ever baked as a child. Not that I was actively cooking when I was a child, this was actually the only cake I new how to prepare and most probably it was also the case for my mom who, lets face it, is not much into cooking. It is so simple to do as it is to remember the ingredients. 4 eggs, 3 cups of flour, 2 cups of sugar and 1 cup of single cream, and so its name. Easy, right?

Since in the past few days we had loads of visits I thought that I could prepare two different variants of this cake that would cover dessert and breakfast. I separated the preparation in two and I made a tiny cake that ended up to be quite tall and nourishing, and a loaf perfect to have in the morning with the ¨cafe-latte¨. The cake as I show you here today is the typical birthday cake in Argentina, with two layers of ¨dulce de leche¨ and chocolate ganache. Sooo good! and even though it was small I could even take a piece at work to indulge my colleagues.
As for the loaf, it is perfect for breakfast because you can dip it in the latte or put jam on it. Yumie! It is a very versatile preparation so you can be very creative! you can even add apples or strawberries when baking!. As for me I chose lemon zest.

Not only we had visitors these days but we were the visitors of the monster of Ness Lake!! With A. we took a bus and 10 hours later (yes ten hours... the cheapest option) we where in the Highlands, in Inverness (Scotland), the house of the famous monster and the Lock Ness (the castle). This place is so mysterious... and with endless landscapes. Kilometers and kilometers of fields, hills, trees and sheeps. Dessert beaches, mighty winds and hesitant clouds. It is a perfect place to house bizarre creatures, we all know the truth but when you are there... you start having doubts... is the monster myth or true? In any case, we had a great time, we always do when we are together.

See you all next time and on the meantime be happy :)

Preheat the oven at 150°C and butter the desired mould. This preparation is for a 25-28 cm mould but I used an round18 cm one and a rectangular one.

Sponge cake
With an electric mixer blend together the eggs with the sugar until reaching three times the initial volume. Add the single cream and the lemon zest and continue mixing. Add the sifted flour mixing constantly until reaching a creamy homogeneous consistency. Pour the preparation in the mould and bake for 45-60 min or until a knife inserted in the middle of the cake comes out clean. DO NOT open the oven during the first 40 minutes or it will fall off.

Let it cool down in a wire rack and serve with some sugar on top. Otherwise cut the cake in two halves and spread dulce de leche, cream, jam in each layer. You can also combine, for instance one layer with dulce de leche and the other one with whipped cream. I put dulce de leche in both layers and covered it with chocolate.

Chocolate ganache
Melt the chocolate in a water bath under medium-low heat. Add the butter and dulce de leche and bend together with a wooden spoon. Do not separate the spoon from the bottom of the mixing bowl to avoid air bubbles in your chocolate. Spread the ganache on the cake and on the sides and pour some grounded almonds on top. Let cool for at least an hour before serving and remember that this cake is fantastic the day after.

Sorry for not showing the inside of the cake but I needed intact for my guests :). next time I will do it specially for you.
